Pearl barley is most often cooked in stocks or soups, where it absorbs all the flavours from the liquid. Pearl barley also makes a great substitute for rice in a risotto and can be added to salads.

Cooking Instructions:

Rinse before cooking

Bring 1 cup pearl barley and 2 1/2 cups water (or broth) to a boil.

Reduce heat, cover and simmer for 40-50 minutes until tender or most of the liquid has been absorbed.
