Split peas are the mature form of peas: the dried seeds of peas are peeled and then split, increasing the surface area of the pea. As a result, split peas don’t need to be soaked and cook more quickly than whole peas.
Add to pan, cover and bring to a boil.
Reduce heat and simmer, tilting the lid slightly to allow steam to escape.
Cook for up to 60 minutes, or until tender.
